Ingredients
- 3–4 boneless, skinless chicken breasts
- 2 cloves fresh garlic
- 1 cup mixed bell peppers (red, yellow, green)
- 1 cup pineapple chunks (fresh or canned)
- ? cup cornstarch
- ? cup low-sodium soy sauce
- 2 tbsp rice vinegar
- ? cup ketchup
- 3 tbsp brown sugar
Instructions
- Cut the chicken into bite-sized pieces, rinse under cold water, and pat dry with paper towels.
- Toss the chicken pieces with cornstarch until they are evenly coated.
- In a skillet over medium-high heat, heat vegetable oil and cook the coated chicken until golden brown (5-7 minutes). Remove from skillet and set aside.

- In a bowl, whisk together soy sauce, rice vinegar, ketchup, brown sugar, and pineapple juice. Pour this mixture into the skillet with vegetables.
- Add back the fried chicken along with pineapple chunks; stir to combine and simmer for five minutes.
