- 1/3 cup coconut oil (melted)
- 3/4 cup brown sugar
- 1/2 cup pineapple tidbits (fresh or canned)
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chopped nuts (walnuts or macadamia) – Optional
Instructions
- Preheat your oven to 350?F (175?C) and grease a loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Mix in melted coconut oil and brown sugar until well combined. Add two eggs and mix until smooth.
- Gently fold in pineapple tidbits, then sprinkle baking soda and salt over the mixture.
- Gradually add all-purpose flour while stirring until just combined; lumps are welcome.
- If desired, fold in chopped nuts for added texture.
- Pour batter into the greased loaf pan and bake for 60 minutes, or until a toothpick comes out clean. Let cool before slicing.
