Instructions
- Preheat your oven to 375?F (190?C) and spray a baking dish with nonstick cooking spray.
- In a skillet over medium heat, add olive oil and saut? the diced onion and bell peppers until tender, about 5-7 minutes.
- Add the ground beef to the skillet, season with salt and pepper, and cook until browned through, approximately 7-10 minutes.
- Spoon the beef mixture into each tortilla, roll them tightly, and place seam-side down in the prepared baking dish.
- Pour enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Bake for 20-25 minutes until the cheese is bubbly and golden brown. Serve garnished with sour cream and cilantro if desired.
