- 8 oz fresh mushrooms, sliced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup full-fat sour cream
- 1 tsp Dijon mustard
- 3 tbsp olive oil
- Salt and pepper to taste
- 12 oz egg noodles
Instructions
- Prepare all ingredients by slicing the beef, mushrooms, and onions; mince the garlic.
- In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Sear the beef strips for about 3-5 minutes until browned. Remove and set aside.
- In the same skillet, add another tablespoon of oil if necessary. Saut? onions and mushrooms for approximately 5 minutes until softened; add garlic and cook for an additional minute.
- Pour in the beef broth and bring to a simmer. Stir in Dijon mustard while scraping any browned bits from the pan; simmer until slightly thickened (about 5 minutes).
- Reduce heat to low and mix in sour cream until combined. Return beef to the skillet and gently warm through without boiling.
- Serve over egg noodles garnished with parsley if desired.
