Ingredients

Bold Spiced Chai Foundation
  • 2 bags black chai tea or 2 tbsp loose leaf
  • 1 cup boiling water filtered
  • 1 cinnamon stick whole
  • 2 cardamom pods lightly crushed
  • 1 star anise whole
Velvety Steamed Eggnog Base
  • 1 cup eggnog non-alcoholic traditional eggnog
  • 0.5 cup whole milk or oat milk
  • 1 tbsp light brown sugar or pure maple syrup
  • 1 tsp pure vanilla bean paste or vanilla extract
  • 0.25 tsp ground cinnamon
  • 0.25 tsp freshly grated nutmeg
Whipped Crown & Garnishes
  • 0.5 cup whipped cream freshly whipped
  • 2 cinnamon sticks for stirring
  • 0.25 tsp nutmeg and cinnamon for dusting

Method

Instructions
  1. Steep Concentrated Chai: In a heatproof measuring cup or teapot, steep the chai tea bags, cinnamon stick, crushed cardamom pods, and star anise in 1 cup of boiling water for 5 minutes. Squeeze bags gently and strain spices.
  2. Heat & Froth Eggnog Milk: In a small saucepan over medium-low heat, combine eggnog, whole milk, brown sugar, vanilla bean paste, cinnamon, and nutmeg. Whisk continuously until steaming (do not boil!). Froth with a handheld milk frother for 30 to 45 seconds until thick and velvety.
  3. Pour & Combine: Divide hot concentrated chai tea between two mugs (about 1/2 cup each). Slowly pour the steaming frothy eggnog milk over the chai, allowing the microfoam to rise to the rim.
  4. Crown, Garnish & Serve: Top each mug with a swirl of fresh whipped cream, dust with freshly grated nutmeg and cinnamon, insert a cinnamon stick stirrer, and serve immediately!
