Truffle Oil Fries

Ingredients
  

Fries
  • 4 medium Russet potatoes peeled and cut into fries
  • 4 cups vegetable oil for frying
  • 1 teaspoon salt to taste
Truffle Oil
  • 2 tablespoons truffle oil for drizzling
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Prepare the Potatoes
  1. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
  2. Drain and pat the fries dry with paper towels.
Fry the Fries
  1. Heat the vegetable oil in a large pot to 350?F (175?C).
  2. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.
  3. Remove fries with a slotted spoon and drain on paper towels. Season with salt immediately.
Finish with Truffle Oil
  1. Drizzle the hot fries with truffle oil and toss to coat evenly.
  2. Garnish with chopped parsley before serving.
