Ingredients
  

Protein
  • 1 lb Ground Beef or ground turkey
  • 1 tbsp Taco Seasoning store-bought or homemade
Base
  • 2 cups Cooked Rice or quinoa
Toppings
  • 1 cup Black Beans canned, drained and rinsed
  • 1 cup Corn canned or frozen
  • 1 cup Cherry Tomatoes halved
  • 1 cup Shredded Lettuce
  • 1 cup Shredded Cheese cheddar or Mexican blend
  • 1 cup Sour Cream or Greek yogurt
  • 1 avocado Avocado sliced
  • 1 cup Salsa for serving

Method
 

Prepare the Protein
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning and a splash of water. Stir and cook for an additional 5 minutes.
Assemble the Bowl
  1. In a mixing bowl, layer cooked rice as the base.
  2. Top with seasoned ground beef, black beans, corn, cherry tomatoes, shredded lettuce, and cheese.
  3. Add dollops of sour cream and slices of avocado on top.
  4. Serve with salsa on the side.
