Stuffed Peppers

Ingredients
  

Stuffing
  • 1 cup cooked rice white or brown
  • 1 lb ground beef or turkey
  • 1 cup diced tomatoes canned or fresh
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • 4 large bell peppers any color
  • 1 cup shredded cheese optional, for topping

Method
 

Prepare the Peppers
  1. Preheat the oven to 375?F (190?C). Cut the tops off the bell peppers and remove the seeds.
Cook the Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add diced onion and garlic, cooking until softened.
  3. Stir in cooked rice, diced tomatoes, salt, pepper, and Italian seasoning. Mix well and cook for 5 minutes.
Stuff the Peppers
  1. Fill each bell pepper with the meat and rice mixture, packing it in tightly.
  2. Place the stuffed peppers upright in a baking dish. If desired, sprinkle cheese on top.
Bake
  1. Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake for an additional 5 minutes until cheese is melted and peppers are tender.
Serve
  1. Remove from oven and let cool for a few minutes before serving.
