  • 2 pounds fresh strawberries hulled and sliced
  • 4 cups granulated sugar
  • 1 lemon juice freshly squeezed
  • 1 package pectin optional, for thicker jam

Method
 

Prepare the Strawberries
  1. Wash and hull the strawberries, then slice them into small pieces.
Cook the Jam
  1. In a large pot, combine the sliced strawberries, sugar, and lemon juice. Stir well.
  2. Heat the mixture over medium heat, stirring frequently until the sugar dissolves.
  3. Bring the mixture to a boil and cook for about 20-30 minutes, or until it reaches the desired consistency.
  4. If using pectin, follow the package instructions for adding it.
Jar the Jam
  1. Remove the pot from heat and ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace.
  2. Seal the jars with lids and process in a boiling water bath for 10 minutes to ensure preservation.

Notes
