Ingredients
  

For the Compote
  • 2 cups Fresh strawberries Rinsed, stems removed, sliced
  • 1/4 cup Granulated sugar Adjust to taste
  • 1 tablespoon Lemon juice Freshly squeezed
  • 1 teaspoon Vanilla extract
Optional Add-ins
  • 1 tablespoon Balsamic vinegar Optional
  • 1/4 cup Mint leaves Chopped, optional

Method
 

Preparation
  1. Rinse 2 cups of fresh strawberries under cold water and gently pat them dry. Remove the stems and slice them into halves or quarters.
Combine Ingredients
  1. In a medium saucepan, mix the sliced strawberries with ? cup of sugar and 1 tablespoon of lemon juice.
Cooking
  1. Place the saucepan over medium heat and cook for about 10 minutes, stirring occasionally.
Thickening
  1. Once bubbling, reduce heat to low and let it simmer for an additional 5-7 minutes until it thickens slightly.
Cooling
  1. Remove from heat and allow the strawberry compote to cool slightly in the pan before transferring it to a jar or bowl.
