Ingredients
  

Chia Pudding Base
  • 1 cup almond milk or any milk of choice
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
Strawberry Layer
  • 2 cups fresh strawberries sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup optional for sweetness

Method
 

Prepare Chia Pudding
  1. In a mixing bowl, whisk together almond milk, chia seeds, maple syrup, and vanilla extract until well combined.
  2. Let the mixture sit for 5 minutes, then whisk again to prevent clumping.
  3. Cover and refrigerate for at least 2 hours or overnight until it thickens.
Prepare Strawberry Layer
  1. In a separate bowl, combine sliced strawberries, lemon juice, and maple syrup (if using).
  2. Let the strawberries macerate for about 10 minutes to release their juices.
Assemble Pudding
  1. In serving glasses, layer the chia pudding and the macerated strawberries.
  2. Repeat layers until glasses are filled.
  3. Serve immediately or refrigerate until ready to serve.
