Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 4 tablespoons unsalted butter, melted
Filling
  • 8 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream whipped to soft peaks
  • 1 cup fresh strawberries, chopped
Topping
  • 1 cup fresh strawberries, sliced for garnish
  • 1 tablespoon sugar optional, for macerating strawberries

Method
 

Prepare the crust
  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Divide the mixture evenly among serving cups and press down firmly to form the crust.
Make the filling
  1. In a separate bowl, beat the softened cream cheese and sugar together until smooth.
  2. Add vanilla extract and mix until combined.
  3. Gently fold in the whipped cream until fully incorporated.
  4. Fold in the chopped strawberries.
Assemble the cups
  1. Spoon the cheesecake filling over the crust in each cup.
  2. Refrigerate for at least 40 minutes to set.
Prepare the topping
  1. If desired, sprinkle sliced strawberries with sugar and let sit for 10 minutes to macerate.
  2. Top each cheesecake cup with the sliced strawberries before serving.

Notes

For best results, use full-fat cream cheese and heavy cream. You can also add a layer of strawberry sauce for extra flavor.
