St. Patrick's Day Irish Soda Bread

Ingredients
  

For the Bread
  • 4 cups all-purpose flour or whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1.5 cups buttermilk or milk mixed with vinegar
  • 1 cup raisins or currants or dried cranberries
Optional Glaze
  • 2 tablespoons butter for brushing on top

Method
 

Baking Instructions
  1. Preheat your oven to 425?F (220?C).
  2. Mix the dry ingredients in a large bowl: flour, baking soda, salt, and sugar. Stir until evenly combined.
  3. Create a well in the center of the dry mix. Pour in the buttermilk gradually while stirring gently with a wooden spoon, forming a sticky dough.
  4. Knead the dough on a floured surface for about 1-2 minutes until it comes together.
  5. Shape the dough into a round loaf about 1? inches thick. Place it on a parchment-lined baking sheet, and score a deep 'X' on top.
  6. Bake for 30-35 minutes until golden brown and sounds hollow when tapped on the bottom.
  7. Cool the bread on a wire rack for at least 10 minutes before slicing.
