St. Patrick's Day Irish Lamb Stew

Ingredients
  

For the Stew
  • 2 pounds Lamb shoulder Cut into chunks
  • 3 medium Carrots Chopped
  • 4 medium Potatoes Yukon Gold, chopped
  • 1 large Onion Chopped
  • 4 cloves Garlic Minced
  • 4 cups Beef broth Or vegetable broth
  • 2 tablespoons Fresh thyme Or dried thyme
  • 2 leaves Bay leaves
For Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Red wine Dry variety

Method
 

Preparation
  1. Chop the carrots, potatoes, and onions into bite-sized pieces.
Cooking
  1. Heat a large pot over medium-high heat and add olive oil. Brown the lamb pieces for about 5-7 minutes.
  2. Add minced garlic and fresh thyme, stirring for just a minute.
  3. Incorporate the chopped carrots and onions, cooking for about 5 minutes until onions are translucent.
  4. Pour in the beef or vegetable broth, scraping up any browned bits from the bottom of the pot.
  5. Stir in salt, pepper, and a splash of Worcestershire sauce. Taste and adjust seasoning as needed.
  6. Cover the pot and reduce heat to low. Let it simmer for about 1.5 hours, stirring occasionally.
  7. If desired, mix a tablespoon of cornstarch with cold water and stir it into the pot during the last 10 minutes of cooking.
Serving
  1. Garnish with fresh parsley before serving for an extra pop of color.
