Preparation
- Chop the carrots, potatoes, and onions into bite-sized pieces.
Cooking
- Heat a large pot over medium-high heat and add olive oil. Brown the lamb pieces for about 5-7 minutes.
- Add minced garlic and fresh thyme, stirring for just a minute.
- Incorporate the chopped carrots and onions, cooking for about 5 minutes until onions are translucent.
- Pour in the beef or vegetable broth, scraping up any browned bits from the bottom of the pot.
- Stir in salt, pepper, and a splash of Worcestershire sauce. Taste and adjust seasoning as needed.
- Cover the pot and reduce heat to low. Let it simmer for about 1.5 hours, stirring occasionally.
- If desired, mix a tablespoon of cornstarch with cold water and stir it into the pot during the last 10 minutes of cooking.
Serving
- Garnish with fresh parsley before serving for an extra pop of color.
