  • 1/2 cup unsalted butter (cold, cubed) Cold butter creates flaky layers; don?t substitute with melted butter.
  • 1 cup Irish cheddar cheese (shredded) The star of the show; sharp cheddar gives a rich, tangy flavor.
  • 3/4 cup buttermilk Provides moisture and a slight tang; regular milk works in a pinch but lacks richness.
For the Optional Topping
  • 2 tablespoons melted butter Brushed on top after baking adds a lovely sheen and flavor.
  • 1/4 teaspoon garlic powder Sprinkle on top for an extra flavor kick; you can skip this if desired.
  • 1 tablespoon fresh chives (chopped) Adds a pop of color and freshness; substitute with green onions if needed.

Method
 

Preparation
  1. Preheat your oven to 450?F (232?C).
  2. Combine the dry ingredients in a large mixing bowl: flour, baking powder, salt, and baking soda. Stir well until everything is evenly mixed.
  3. Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in shredded Irish cheddar cheese, making sure it?s evenly distributed throughout the dough.
  5. Add buttermilk gradually, folding until the dough just comes together.
  6. Turn the dough out onto a floured surface and gently knead it for just a few seconds. Pat it down to about 1-inch thickness before cutting out your biscuits with a round cutter.
  7. Place the cut biscuits on a baking sheet lined with parchment paper, ensuring they are touching slightly for soft edges. Bake for 12-15 minutes or until they are golden brown on top.
  8. Cool them on a wire rack for a few minutes before serving warm with butter or your favorite jam.
