For the Mashed Potatoes
  • 2 lbs Yukon Gold potatoes or Russet potatoes for a fluffier result
  • 1/2 cup heavy cream or milk/plant-based milk for a lighter version
  • 4 tablespoons unsalted butter or vegan butter for dairy-free
  • 1 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper omit for milder taste
For the Green Element
  • 1 cup fresh spinach or kale/arugula as alternatives
  • 1/2 cup fresh parsley or basil for a different flavor
  • 1 clove garlic minced or roasted for milder flavor

Method
 

Preparation
  1. Boil the potatoes in a large pot of salted water for about 15-20 minutes until fork-tender.
  2. Drain the potatoes thoroughly and return them to the pot to eliminate excess moisture.
  3. Mash the potatoes using a potato masher or ricer until smooth and fluffy.
  4. Mix in butter, cream, and salt to taste until well combined.
  5. Add spinach or green onions and mix until evenly distributed.
  6. Serve hot, garnished with additional green onions or fresh herbs.
