Ingredients
  

Pasta
  • 12 oz spaghetti
Eggplant
  • 1 medium eggplant cut into cubes
Vegetables
  • 4 cloves garlic minced
  • 1 tsp red pepper flakes adjust to taste
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
Sauce
  • 1 cup olive oil for roasting and saut?ing
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tsp balsamic vinegar
Garnish
  • 1/4 cup parmesan cheese grated
  • 2 tbsp fresh basil chopped

Method
 

Prepare the Eggplant
  1. Preheat the oven to 400?F (200?C). Toss the eggplant cubes with olive oil, salt, and pepper, and spread them on a baking sheet. Roast for 20 minutes until golden and tender.
Cook the Pasta
  1. While the eggplant is roasting, bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
Saut? Vegetables
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, saut?ing for 1-2 minutes until fragrant. Add cherry tomatoes and spinach, cooking until the tomatoes soften.
Combine and Serve
  1. Add the roasted eggplant and cooked spaghetti to the skillet. Drizzle with balsamic vinegar and toss to combine. Serve hot, garnished with parmesan cheese and fresh basil.

Notes
