- Caramelize Cinnamon Apples: Melt 2 tbsp butter in a skillet over medium heat. Add diced apples, brown sugar, cinnamon, and 1 tbsp maple syrup. Sauté for 6 to 8 minutes until tender-crisp and cloaked in a fragrant caramel sauce. Keep warm on low heat.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine Wet Ingredients & Whip Whites: In a medium bowl, whisk together egg yolks, buttermilk, melted butter, and vanilla. In a separate clean bowl, beat the 2 egg whites until soft peaks form.
- Fold Batter Gently: Pour the buttermilk mixture into the dry flour blend and stir just until combined. Gently fold in the whipped egg whites with a rubber spatula in two batches. Do not overmix; a few small lumps are desired for fluffy waffles.
- Bake in Waffle Iron: Preheat a Belgian waffle iron and lightly grease. Pour roughly 1/2 to 3/4 cup of batter into the center, close lid, and cook for 4 to 5 minutes until deep golden brown and exceptionally crisp on the outside.
- Top & Serve Warm: Transfer waffles to plates. Crown with warm caramelized cinnamon apples, toasted pecans, a dollop of whipped cream, and a generous drizzle of warm pure maple syrup. Serve immediately!
