Ingredients
  

Pineapple Salsa
  • 1 medium pineapple peeled, cored, and cut into rings
  • 1 tablespoon olive oil for grilling
  • 1 medium red onion finely chopped
  • 1 medium jalape?o seeded and minced
  • 1/4 cup fresh cilantro chopped
  • 1 lime juice freshly squeezed
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt to taste

Method
 

Prepare the Pineapple
  1. Preheat the grill to medium-high heat.
  2. Brush the pineapple rings with olive oil on both sides.
  3. Grill the pineapple for about 3-4 minutes on each side, until grill marks appear and the pineapple is slightly caramelized.
  4. Remove from the grill and let cool slightly before chopping into small pieces.
Mix the Salsa
  1. In a mixing bowl, combine the chopped grilled pineapple, red onion, jalape?o, cilantro, lime juice, smoked paprika, and salt.
  2. Toss gently to combine all ingredients.
  3. Taste and adjust seasoning if necessary.
Serve
  1. Serve immediately with tortilla chips or as a topping for grilled meats.

Notes
