Ingredients
  

Brisket
  • 4 pounds corned beef brisket preferably with seasoning packet
Spices
  • 2 tablespoons black peppercorns
  • 1 tablespoon coriander seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Wood Chips
  • 2 cups wood chips hickory or applewood recommended

Method
 

Preparation
  1. Remove the corned beef brisket from its packaging and rinse it under cold water to remove excess brine.
  2. Pat the brisket dry with paper towels.
  3. In a spice grinder, combine the black peppercorns, coriander seeds, mustard seeds, paprika, garlic powder, and onion powder. Grind to a coarse powder.
  4. Rub the spice mixture evenly over the brisket.
Smoking
  1. Preheat the smoker to 225?F (107?C).
  2. Soak the wood chips in water for at least 30 minutes, then drain.
  3. Place the wood chips in the smoker box or directly on the coals.
  4. Place the brisket in the smoker, fat side up, and smoke for about 4-6 hours, or until the internal temperature reaches 190?F (88?C).
  5. Wrap the brisket in aluminum foil and let it rest for at least 30 minutes before slicing.

Notes

For best results, smoke the brisket the day before serving and refrigerate overnight. Reheat before serving.
