Ingredients
  

Cucumber
  • 2 large cucumbers preferably English cucumbers
Dressing
  • 3 tablespoons soy sauce low sodium preferred
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon sugar optional
  • 1 teaspoon sesame seeds for garnish
  • 2 scallions scallions sliced for garnish

Method
 

Prepare the Cucumbers
  1. Wash the cucumbers and cut off the ends. Place them on a cutting board and gently smash them with the flat side of a knife or a rolling pin until they crack open.
  2. Cut the smashed cucumbers into bite-sized pieces and place them in a mixing bowl.
Make the Dressing
  1. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, minced garlic, and sugar until well combined.
Combine and Serve
  1. Pour the dressing over the smashed cucumbers and toss to coat evenly.
  2. Transfer to a serving dish and garnish with sesame seeds and sliced scallions.
  3. Serve immediately or chill in the refrigerator for 10 minutes before serving.
