Salvadoran Pupusas

Pupusas are traditional Salvadoran stuffed corn tortillas filled with various ingredients, such as cheese, beans, and meats, served with a side of curtido and salsa.

Ingredients
  

Dough
  • 2 cups masa harina Corn flour
  • 1 cup warm water
  • 1 teaspoon salt
Filling
  • 1 cup shredded cheese Mozzarella or queso fresco
  • 1 cup refried beans Black or pinto beans
  • 1 cup cooked chicharr?n Ground pork cracklings
Curtido
  • 2 cups cabbage Shredded
  • 1 carrot carrot Shredded
  • 1 cup white vinegar
  • 1 teaspoon oregano
  • 1 cup water

Method
 

Prepare the Dough
  1. In a mixing bowl, combine masa harina, salt, and warm water. Mix until a smooth dough forms.
  2. Divide the dough into equal portions and shape them into balls.
Prepare the Filling
  1. In a separate bowl, mix the shredded cheese, refried beans, and ground chicharr?n.
Assemble the Pupusas
  1. Flatten each dough ball into a disc, place a spoonful of filling in the center, and fold the edges over to seal.
  2. Gently flatten the filled dough ball to form a thick tortilla.
Cook the Pupusas
  1. Heat a griddle or skillet over medium heat. Cook each pupusa for about 3-4 minutes on each side until golden brown.
Prepare the Curtido
  1. In a bowl, combine shredded cabbage, carrot, vinegar, oregano, and water. Let it sit for at least 30 minutes before serving.
