Ingredients
  

Lamb
  • 1 whole leg of lamb about 4-5 pounds
Seasoning
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground

Method
 

Preparation
  1. Preheat the oven to 375?F (190?C).
  2. In a small bowl, mix together the minced garlic, chopped rosemary, olive oil, salt, and pepper.
  3. Rub the mixture all over the leg of lamb, ensuring it is well coated.
Roasting
  1. Place the leg of lamb in a roasting pan and insert a meat thermometer into the thickest part of the meat.
  2. Roast in the preheated oven for about 1 hour and 45 minutes, or until the internal temperature reaches 135?F (57?C) for medium-rare.
  3. Remove the lamb from the oven and let it rest for 15 minutes before carving.
Serving
  1. Slice the lamb against the grain and serve with your choice of sides.
