Ingredients
  

Rhubarb Syrup
  • 1 cup rhubarb chopped
  • 1 cup water
  • 1 cup sugar
Margarita Ingredients
  • 1/2 cup rhubarb syrup
  • 1 cup tequila preferably blanco
  • 1/4 cup lime juice freshly squeezed
  • 1 teaspoon jalape?o finely chopped
  • 1 tablespoon salt for rimming glasses
  • 1 lime lime wedges for garnish

Method
 

Prepare Rhubarb Syrup
  1. In a saucepan, combine chopped rhubarb, water, and sugar. Bring to a boil, then reduce heat and simmer for 10 minutes until rhubarb is soft.
  2. Strain the mixture through a fine mesh sieve to remove solids, and let the syrup cool.
Mix the Margaritas
  1. In a shaker, combine rhubarb syrup, tequila, lime juice, and chopped jalape?o.
  2. Fill the shaker with ice and shake well until chilled.
  3. Rim glasses with lime juice and dip in salt. Strain the margarita mixture into prepared glasses filled with ice.
  4. Garnish with lime wedges and serve immediately.
