Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 1/4 teaspoon salt
Filling
  • 2 cups rhubarb chopped
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Method
 

Prepare the Crust
  1. Preheat the oven to 350?F (175?C). Grease a 9x9 inch baking pan.
  2. In a mixing bowl, combine flour, shredded coconut, sugar, melted butter, and salt. Mix until crumbly.
  3. Press the mixture into the bottom of the prepared baking pan.
Make the Filling
  1. In a separate bowl, combine chopped rhubarb, sugar, cornstarch, vanilla extract, and egg. Mix well.
  2. Pour the filling over the crust in the baking pan.
Bake
  1. Bake in the preheated oven for 30 minutes or until the filling is set and the top is lightly golden.
  2. Remove from the oven and let cool before cutting into bars.

Notes
