Quinoa and Black Bean Lettuce Tacos

Ingredients
  

Filling
  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 can black beans drained and rinsed
  • 1 cup corn fresh or frozen
  • 1 medium red bell pepper diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon salt to taste
Taco Assembly
  • 8 leaves romaine lettuce or butter lettuce
  • 1 avocado sliced
  • 1/4 cup cilantro chopped
  • 1/2 cup salsa for topping

Method
 

Prepare the Quinoa
  1. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
Cook the Filling
  1. In a large skillet, heat olive oil over medium heat. Add diced red bell pepper and cook for 3-4 minutes until softened.
  2. Stir in black beans, corn, cumin, chili powder, and salt. Cook for another 5 minutes, mixing well.
  3. Once quinoa is cooked, fluff with a fork and mix it into the skillet with the vegetable mixture. Stir in lime juice.
Assemble the Tacos
  1. Take a lettuce leaf and fill it with the quinoa and black bean mixture. Top with sliced avocado, chopped cilantro, and salsa.
  2. Repeat with remaining lettuce leaves and filling. Serve immediately.
