Ingredients
  

Topping
  • 1 can pineapple slices drained
  • 1/2 cup brown sugar packed
  • 1/4 cup unsalted butter melted
Cake Batter
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter softened
  • 1 large egg
  • 1/2 cup milk
  • 1 tsp vanilla extract

Method
 

Prepare the Topping
  1. Preheat the oven to 350?F (175?C).
  2. In a mixing bowl, combine melted butter and brown sugar until smooth.
  3. Pour the mixture into the bottom of the cake pan.
  4. Arrange the pineapple slices on top of the sugar mixture and place a cherry in the center of each slice.
Make the Cake Batter
  1. In another bowl, whisk together flour, baking powder, and salt.
  2. In a separate bowl, cream together granulated sugar and softened butter until light and fluffy.
  3. Add the egg, milk, and vanilla extract to the butter mixture and mix until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cake
  1. Pour the cake batter over the pineapple topping in the pan.
  2. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the cake cool for 10 minutes, then invert onto a serving plate.
