  • 1 medium red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 medium jalape?o, seeded and minced optional for heat
  • 1 tablespoon lime juice freshly squeezed
  • 1/2 teaspoon salt to taste

Method
 

Preparation
  1. In a mixing bowl, combine the diced pineapple, red bell pepper, red onion, cilantro, and jalape?o.
  2. Add lime juice and salt to the mixture, and stir gently to combine.
  3. Taste and adjust seasoning if necessary.
  4. Serve immediately or refrigerate for up to an hour to allow flavors to meld.
