Ingredients

Rice and Protein
  • 2 cups cooked jasmine rice preferably day-old
  • 1 lb shrimp peeled and deveined
Vegetables and Fruits
  • 1 cup pineapple chunks fresh or canned
  • 1 cup peas fresh or frozen
  • 1 medium carrot diced
  • 3 stalks green onions sliced
  • 2 cloves garlic minced
Sauces and Seasonings
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon black pepper freshly ground
Oil
  • 2 tablespoons vegetable oil for frying

Method

Cooking the Shrimp
  1. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove and set aside.
Stir-Frying the Vegetables
  1. In the same wok, add the remaining tablespoon of oil. Stir-fry the garlic and carrots for 2 minutes until fragrant.
  2. Add the peas and pineapple chunks, and stir-fry for another 2-3 minutes.
Combining Ingredients
  1. Add the cooked rice to the wok, breaking up any clumps. Stir in the cooked shrimp.
  2. Pour in the soy sauce, fish sauce, oyster sauce, and sesame oil. Mix well to combine all ingredients.
  3. Add the sliced green onions and black pepper. Stir-fry for another 2 minutes until heated through.
Serving
