Ingredients
  

Tostadas
  • 8 pieces corn tostadas store-bought or homemade
Peach Topping
  • 4 medium ripe peaches diced
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon honey optional for sweetness
  • 1 teaspoon chile powder adjust to taste
  • 1 pinch salt
Garnish
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup crumbled queso fresco

Method
 

Prepare the Tostadas
  1. Preheat the oven to 400?F (200?C). Arrange the tostadas on a baking sheet.
  2. Bake the tostadas for about 5-7 minutes until they are crispy and lightly golden.
Make the Peach Topping
  1. In a mixing bowl, combine the diced peaches, lime juice, honey, chile powder, and salt. Toss gently to combine.
Assemble the Tostadas
  1. Once the tostadas are baked, remove them from the oven and let them cool slightly.
  2. Top each tostada with the peach mixture, sprinkle with cilantro and queso fresco.
  3. Serve immediately and enjoy!
