Base Ingredients
  • 2 cups fresh peaches peeled and diced
  • 1 cup ricotta cheese whole milk
  • 1/2 cup heavy cream
  • 1/2 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Method
 

Prepare the Peach Mixture
  1. In a blender, combine the diced peaches, sugar, lemon juice, and vanilla extract. Blend until smooth.
  2. Transfer the peach mixture to a mixing bowl.
Combine Ingredients
  1. Add the ricotta cheese and heavy cream to the peach mixture. Stir until well combined.
Chill the Mixture
  1. Cover the bowl and refrigerate the mixture for at least 2 hours to chill.
Churn the Ice Cream
  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze the Ice Cream
  1. Transfer the ice cream to an airtight container and freeze for at least 2 hours or until firm.
