Ingredients
  

Fruits and Vegetables
  • 3 cups ripe peaches peeled and diced
  • 1 cup ripe tomatoes diced
  • 1 cup cucumber peeled and diced
  • 1 small red bell pepper diced
  • 1 small red onion diced
  • 2 cloves garlic minced
  • 2 tablespoons fresh basil chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 cup vegetable broth or water
  • to taste salt
  • to taste black pepper

Method
 

Preparation
  1. In a blender, combine the peaches, tomatoes, cucumber, red bell pepper, red onion, garlic, basil, olive oil, red wine vinegar, and vegetable broth.
  2. Blend until smooth. If the mixture is too thick, add more vegetable broth or water to reach desired consistency.
  3. Season with salt and black pepper to taste.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve cold, garnished with additional diced peaches and basil if desired.
