Pasta alla Norma

A classic Sicilian pasta dish made with eggplant, tomatoes, and ricotta salata.

Ingredients
  

Pasta
  • 400 grams Pasta (such as rigatoni or penne)
Eggplant
  • 1 large Eggplant Cut into cubes
Tomato Sauce
  • 400 grams Canned crushed tomatoes
Onion
  • 1 medium Onion Chopped
Garlic
  • 2 cloves Garlic Minced
Olive Oil
  • 4 tablespoons Olive oil
Ricotta Salata
  • 100 grams Ricotta salata Grated
Basil
  • 10 leaves Fresh basil Chopped, for garnish
Salt
  • to taste Salt
Pepper
  • to taste Black pepper

Method
 

Prepare the Eggplant
  1. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the cubed eggplant and saut? until golden and tender, about 8-10 minutes. Remove from skillet and set aside.
Make the Sauce
  1. In the same skillet, add the remaining olive oil and saut? the chopped onion until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
  2. Stir in the canned crushed tomatoes and season with salt and pepper. Let the sauce simmer for about 10-15 minutes.
Cook the Pasta
  1. While the sauce simmers, cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and reserve some pasta water.
Combine and Serve
  1. Add the saut?ed eggplant to the sauce and mix well. If the sauce is too thick, add a little reserved pasta water.
  2. Toss the cooked pasta with the sauce until well coated. Serve hot, topped with grated ricotta salata and fresh basil.

Notes

For a spicier version, add red pepper flakes to the sauce.
