Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt divided
  • 1 teaspoon black pepper divided
  • 2 tablespoons olive oil
Vegetables
  • 2 cups snap peas trimmed
  • 1 cup cherry tomatoes halved
  • 3 cloves garlic minced
Sauce
  • 1 cup chicken broth
  • 1 lemon juiced
  • 1 teaspoon dried thyme
  • 1 teaspoon honey

Method
 

Cooking the Chicken
  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes on each side until golden brown and cooked through.
Adding Vegetables
  1. Remove the chicken from the skillet and set aside. In the same skillet, add snap peas, cherry tomatoes, and garlic. Saut? for 3-4 minutes until vegetables are tender.
Making the Sauce
  1. Add chicken broth, lemon juice, thyme, and honey to the skillet. Stir to combine and bring to a simmer.
  2. Return the chicken to the skillet and cook for an additional 2-3 minutes, allowing the flavors to meld.
Serving
  1. Serve the chicken and vegetables warm, drizzled with the sauce from the skillet.
