Ingredients
  

Filling
  • 2 cups fresh strawberries hulled and sliced
  • 2 cups rhubarb chopped
  • 1 cup granulated sugar adjust based on sweetness preference
  • 2 tablespoons all-purpose flour for thickening
  • 1 teaspoon vanilla extract
Crisp Topping
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon cinnamon

Method
 

Prepare the Filling
  1. Preheat the oven to 350?F (175?C).
  2. In a mixing bowl, combine strawberries, rhubarb, sugar, flour, and vanilla extract. Toss until well mixed.
  3. Pour the filling into a greased baking dish.
Make the Crisp Topping
  1. In another bowl, mix oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
  2. Sprinkle the crisp topping evenly over the fruit filling in the baking dish.
Bake
  1. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  2. Remove from the oven and let cool slightly before serving.
