No-Bake Blueberry Cheesecake

Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 cup heavy cream cold
  • 1 teaspoon vanilla extract
  • 1 cup blueberries fresh or frozen
Topping
  • 1 cup blueberries for garnish
  • 1 tablespoon granulated sugar optional, for sweetening blueberries

Method
 

Prepare the crust
  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing the filling.
Make the filling
  1. In a large bowl, beat the softened cream cheese and powdered sugar with an electric mixer until smooth and creamy.
  2. In another bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. Fold in the blueberries, reserving some for topping.
Assemble the cheesecake
  1. Pour the filling over the prepared crust and spread evenly.
  2. Cover and refrigerate for at least 4 hours or until set.
Serve
  1. Once set, remove from the springform pan and top with reserved blueberries. Serve chilled.

Notes

For best results, allow the cheesecake to set overnight. You can also use a food processor to crush the graham crackers for the crust.
