Ingredients
  

Base Layer
  • 1/2 cup unsalted butter softened
  • 1/4 cup granulated sugar
  • 1/2 cup graham cracker crumbs
  • 1/2 cup sweetened shredded coconut
  • 2 tablespoons cocoa powder
Custard Layer
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tablespoons vanilla custard powder
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
Chocolate Topping
  • 4 ounces semi-sweet chocolate chopped
  • 2 tablespoons unsalted butter

Method
 

Prepare the Base Layer
  1. In a mixing bowl, combine softened butter, granulated sugar, graham cracker crumbs, shredded coconut, and cocoa powder. Mix until well combined.
  2. Press the mixture firmly into the bottom of a greased 9x9 inch baking pan.
Make the Custard Layer
  1. In another bowl, beat together softened butter, powdered sugar, custard powder, milk, and vanilla extract until smooth and creamy.
  2. Spread the custard mixture evenly over the base layer in the baking pan.
Prepare the Chocolate Topping
  1. Melt the chopped chocolate and butter together in a double boiler, stirring until smooth.
  2. Pour the melted chocolate over the custard layer, spreading it evenly.
Chill and Serve
  1. Refrigerate the bars for at least 2 hours until set. Cut into squares and serve.
