Ingredients
  

Eggplant
  • 2 medium Eggplants sliced into 1/2 inch rounds
Miso Glaze
  • 3 tablespoons Miso Paste white or yellow miso
  • 1 tablespoon Soy Sauce or tamari for gluten-free
  • 1 tablespoon Maple Syrup for sweetness
  • 1 teaspoon Sesame Oil for flavor
  • 1 teaspoon Rice Vinegar for acidity
  • 1 clove Garlic minced
  • 1 teaspoon Ginger freshly grated
Garnish
  • 2 tablespoons Sesame Seeds toasted
  • 2 scallions Scallions sliced

Method
 

Prepare the Eggplant
  1. Slice the eggplants into 1/2 inch rounds and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
  2. Rinse the eggplant slices under cold water and pat dry with a paper towel.
Make the Miso Glaze
  1. In a mixing bowl, combine miso paste, soy sauce, maple syrup, sesame oil, rice vinegar, minced garlic, and grated ginger. Mix until smooth.
Coat the Eggplant
  1. Brush the miso glaze generously over both sides of the eggplant slices.
Air Fry the Eggplant
  1. Preheat the air fryer to 375?F (190?C). Place the glazed eggplant slices in a single layer in the air fryer basket.
  2. Cook for 15-20 minutes, flipping halfway through, until the eggplant is tender and caramelized.
Serve
  1. Remove the eggplant from the air fryer and sprinkle with toasted sesame seeds and sliced scallions before serving.
