Mexican Lasagna with Tortillas

A delicious twist on traditional lasagna, using tortillas instead of pasta, layered with seasoned ground beef, cheese, and a zesty tomato sauce.

Ingredients
  

Meat and Sauce
  • 1 lb Ground Beef or ground turkey
  • 1 can Black Beans drained and rinsed
  • 1 can Diced Tomatoes with green chilies
  • 1 packet Taco Seasoning
  • 1 cup Salsa
Layers
  • 8 Corn Tortillas
  • 2 cups Shredded Cheddar Cheese or Mexican blend
  • 1 cup Sour Cream
  • 1 cup Chopped Green Onions for garnish

Method
 

Prepare the Meat Sauce
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add black beans, diced tomatoes, taco seasoning, and salsa. Stir to combine and simmer for 10 minutes.
Assemble the Lasagna
  1. Preheat the oven to 350?F (175?C).
  2. In a baking dish, spread a layer of the meat sauce on the bottom.
  3. Place 4 tortillas over the sauce, followed by a layer of cheese and sour cream.
  4. Repeat the layers, finishing with a layer of meat sauce and cheese on top.
Bake
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.
  3. Let it cool for 5 minutes before slicing. Garnish with chopped green onions.
