Lamb Ragu Pasta Pappardelle

Ingredients
  

Lamb Ragu
  • 2 lbs ground lamb
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots finely chopped
  • 2 stalks celery, finely chopped
  • 1 can crushed tomatoes 28 oz
  • 1 cup red wine preferably dry
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1 cup beef or lamb stock
  • 1 package pappardelle pasta 12 oz
  • 1/4 cup fresh parsley chopped, for garnish
  • 1/4 cup Parmesan cheese grated, for serving

Method
 

Prepare the Ragu
  1. In a large skillet, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Saut? until softened, about 5-7 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the ground lamb. Cook until browned, breaking it up with a wooden spoon.
  4. Pour in the red wine, scraping up any browned bits from the bottom of the skillet. Let it simmer for about 5 minutes.
  5. Stir in the crushed tomatoes, stock, oregano, thyme, salt, and pepper. Bring to a simmer, then reduce heat to low and cover. Let it cook for 1.5 hours, stirring occasionally.
Cook the Pasta
  1. While the ragu simmers, cook the pappardelle pasta according to package instructions in a large pot of salted boiling water until al dente.
  2. Drain the pasta and reserve a cup of pasta water.
  3. Toss the cooked pasta with the ragu, adding reserved pasta water as needed to achieve desired consistency.
  4. Serve hot, garnished with chopped parsley and grated Parmesan cheese.

Notes
