Ingredients
  

Lamb and Beans
  • 1 lb lamb shoulder cut into 1-inch pieces
  • 1 can white beans drained and rinsed
  • 1 cup chicken broth
  • 1 cup dry white wine
  • 2 tbsp olive oil
Vegetables and Aromatics
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 stalks celery chopped
  • 1 tbsp fresh thyme or 1 tsp dried
Seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika

Method
 

Prepare the Ingredients
  1. Heat olive oil in a Dutch oven over medium heat. Add lamb pieces and brown on all sides, about 5-7 minutes.
  2. Remove lamb and set aside. In the same pot, add onion, garlic, celery, and carrots. Saut? until softened, about 5 minutes.
Cook the Cassoulet
  1. Return the lamb to the pot. Add white beans, chicken broth, white wine, thyme, bay leaf, salt, pepper, and smoked paprika. Stir to combine.
  2. Bring to a simmer, then cover and reduce heat to low. Cook for 1.5 to 2 hours until lamb is tender.
Serve
  1. Remove bay leaf before serving. Serve hot, garnished with fresh herbs if desired.
