Irish Scallop Bisque

Ingredients
  

Seafood Base
  • 1 lb fresh scallops cleaned and patted dry
  • 2 tablespoons olive oil for saut?ing
  • 1 cup onion finely chopped
  • 1 cup celery finely chopped
  • 1 cup carrot finely chopped
  • 3 cloves garlic minced
  • 4 cups fish stock or seafood stock
  • 1 cup heavy cream for richness
  • 2 tablespoons fresh parsley chopped, for garnish
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Base
  1. In a saucepan, heat olive oil over medium heat. Add onion, celery, and carrot, and saut? until softened, about 5 minutes.
  2. Add garlic and cook for an additional minute until fragrant.
  3. Add the scallops and cook until they are just opaque, about 3-4 minutes.
Make the Bisque
  1. Pour in the fish stock and bring to a simmer. Cook for 15 minutes.
  2. Remove from heat and blend the mixture until smooth using a blender.
  3. Strain the blended mixture back into the saucepan to remove any solids.
  4. Stir in the heavy cream, salt, and pepper, and heat gently until warmed through.
Serve
  1. Ladle the bisque into bowls and garnish with chopped parsley before serving.
