Irish Rarebit

Ingredients
  

Cheese Sauce
  • 2 cups sharp cheddar cheese grated
  • 1 cup milk whole or 2%
  • 2 tablespoons butter unsalted
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 dash hot sauce optional
  • 1 pinch salt
  • 1 pinch black pepper
Bread
  • 4 slices bread sturdy bread like sourdough or whole grain

Method
 

Prepare the Cheese Sauce
  1. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until bubbly.
  2. Gradually whisk in the milk, stirring constantly until the mixture thickens.
  3. Remove from heat and stir in the cheddar cheese, Dijon mustard, Worcestershire sauce, hot sauce, salt, and pepper until smooth.
Toast the Bread
  1. Toast the bread slices until golden brown.
Assemble and Serve
  1. Place the toasted bread on a baking sheet and spoon the cheese sauce generously over each slice.
  2. Broil in the oven for 2-3 minutes until the cheese is bubbly and golden.
  3. Serve immediately, garnished with additional black pepper if desired.
