Ingredients
  

Pastry Dough
  • 2 cups all-purpose flour plus extra for dusting
  • 1/2 cup unsalted butter cold and cubed
  • 1/2 cup cold water
  • 1 teaspoon salt
Filling
  • 1 pound ground beef
  • 1 cup potatoes peeled and diced
  • 1 cup carrots peeled and diced
  • 1 small onion finely chopped
  • 1 teaspoon thyme dried
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil for cooking

Method
 

Prepare the Pastry
  1. In a mixing bowl, combine the flour and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
Make the Filling
  1. In a skillet, heat vegetable oil over medium heat. Add the onion and cook until translucent.
  2. Add the ground beef, cooking until browned. Stir in potatoes, carrots, thyme, salt, and pepper. Cook until vegetables are tender. Let cool.
Assemble the Pasties
  1. Preheat the oven to 400?F (200?C). Roll out the pastry dough on a floured surface to about 1/8 inch thick.
  2. Cut out circles of dough, about 6 inches in diameter. Place a spoonful of filling on one half of each circle, fold over, and seal the edges with a fork.
  3. Place the pasties on a baking sheet lined with parchment paper. Cut a small slit in the top of each pasty to allow steam to escape.
  4. Bake in the preheated oven for 25-30 minutes or until golden brown.
Serve
  1. Let the pasties cool slightly before serving. Enjoy warm with your favorite dipping sauce.

Notes

These pasties can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
