Preparation
- Soak the mixed dried fruit in the strong tea for at least 2 hours or overnight.
- Preheat the oven to 180?C (350?F). Grease and line a loaf pan.
Mixing
- In a mixing bowl, combine the flour, brown sugar, baking powder, mixed spice, and salt.
- Add the soaked fruit (with any remaining tea), beaten egg, and melted butter. Mix until just combined.
Baking
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 50-60 minutes, or until a skewer inserted into the center comes out clean.
Cooling
- Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Barmbrack is often served sliced with butter and can be enjoyed fresh or toasted. It is also traditional to hide a ring in the bread for a fun fortune-telling custom.
