Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
Sauce
  • 1/4 cup honey
  • 1/4 cup soy sauce low sodium recommended
  • 3 cloves garlic minced
  • 1 tablespoon cornstarch for thickening
  • 1 tablespoon water to mix with cornstarch
Pineapple
  • 1 cup fresh pineapple cut into chunks
Vegetables
  • 1 bell pepper red or green sliced
  • 1 cup snap peas
Garnish
  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds optional

Method
 

Prepare the Sauce
  1. In a mixing bowl, combine honey, soy sauce, minced garlic, cornstarch, and water. Mix well until smooth.
Cook the Chicken
  1. Heat a skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
Add Vegetables and Pineapple
  1. Add the sliced bell pepper and snap peas to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  2. Add the pineapple chunks and the prepared sauce to the skillet. Stir well to coat everything in the sauce.
Thicken the Sauce
  1. Continue to cook for an additional 2-3 minutes, allowing the sauce to thicken and become glossy.
Serve
  1. Garnish with sliced green onions and sesame seeds if desired. Serve hot over rice or noodles.
