Homemade Apricot Crisp Bars

Ingredients
  

For the filling
  • 2 cups dried apricots chopped
  • 1 cup water for soaking apricots
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
For the crust and topping
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

Prepare the apricot filling
  1. Soak the chopped apricots in water for about 30 minutes until softened.
  2. Drain the apricots and mix them with honey and vanilla extract.
Make the crust and topping
  1. Preheat the oven to 350?F (175?C).
  2. In a mixing bowl, combine rolled oats, flour, brown sugar, melted butter, cinnamon, and salt.
  3. Mix until crumbly and set aside half of the mixture for topping.
Assemble and bake
  1. Press the remaining mixture into the bottom of a greased 9x9 inch baking pan.
  2. Spread the apricot filling evenly over the crust.
  3. Sprinkle the reserved crumb mixture on top of the apricots.
  4. Bake for 25-30 minutes or until the top is golden brown.
  5. Allow to cool before cutting into bars.

Notes
