Ingredients
  

Salad Base
  • 4 cups cherry tomatoes halved
  • 1 cup cooked quinoa cooled
  • 1 cup cucumber diced
  • 1 cup fresh basil leaves torn
Protein Addition
  • 1 cup chickpeas cooked and drained
  • 1 cup feta cheese crumbled
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey optional
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the halved cherry tomatoes, cooked quinoa, diced cucumber, torn basil leaves, and cooked chickpeas.
  2. Add the crumbled feta cheese on top of the salad mixture.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and gently toss to combine all ingredients.
  2. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
