Ingredients
  

Vegetables
  • 1 cup Asparagus, chopped Fresh or frozen
  • 1 cup Bell pepper, diced Any color
  • 1 small Onion, diced Yellow or white
Egg Mixture
  • 6 large Eggs Beaten
  • 1 cup Milk Low-fat or almond milk
  • 1 cup Cheddar cheese, shredded Or any cheese of choice
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
Herbs and Spices
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano

Method
 

Preparation
  1. Preheat the oven to 350?F (175?C).
  2. In a mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and oregano.
  3. In a baking dish, layer the chopped asparagus, bell pepper, and onion evenly.
Assembly
  1. Pour the egg mixture over the vegetables in the baking dish.
  2. Sprinkle the shredded cheese on top.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.
  2. Let it cool for a few minutes before slicing and serving.
