Ingredients
  

Vegetables
  • 1 medium cabbage chopped
  • 2 medium carrots diced
  • 1 medium onion chopped
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 1 medium potato diced
  • 1 cup green beans trimmed and cut
Liquids
  • 6 cups vegetable broth
  • 1 can diced tomatoes with juice
Seasonings
  • 1 teaspoon thyme dried
  • 1 teaspoon oregano dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prepare the Vegetables
  1. Chop the cabbage, carrots, onion, celery, garlic, and potato into small pieces.
Cook the Soup
  1. In a large pot, heat a little oil over medium heat. Add the onion and garlic, saut?ing until translucent.
  2. Add the carrots, celery, and potato, cooking for about 5 minutes.
  3. Stir in the cabbage, green beans, vegetable broth, and diced tomatoes.
  4. Season with thyme, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
Serve
  1. Taste and adjust seasoning if necessary. Serve hot.
